Sourced from their experimental farm in the highlands of Sotará, Cauca near Popayán this lot stems from a project designed to study how various decisions regarding cultivation, harvesting, and processing can be tailored to each specific variety in order to bring out its finest cup profile. In this instance, the cherries were selected at their optimal stage of ripeness and transported to the Área 18 processing center, where they underwent flotation and optical sorting prior to pulping. Subsequently, the coffee underwent a controlled 48-hour fermentation in a sealed bioreactor and was finally dried to an 11% moisture level a process that contributes to a clean, precise, and exceptionally well-defined cup.
